Potluck Pudding

This one is for the Haiku Farm party tomorrow. I would have delivered it in-person, but the thesis, the thesis. AareneX kindly offered to lend me a chapter of her novel in lieu of the Very Scientific stuff that I am supposed to write, but I am too chickenshit to accept. Instead, I counter-offer this virtual rhubarb pudding cake.

If I ever become a real farmer I'm going to be a rhubarb farmer. We have five incredibly healthy plants despite our near-complete neglect. The stuff sells for $3.99/lb in grocery stores around here -- we could be rich! This is a completely simple and completely tasty recipe for you rhubarb lovers out there. As directed it comes out a little bit sweet, a little bit creamy and quite tart -- it tastes sublime when served hot with vanilla ice cream.


Ingredients:
- 1 package of white cake mix, extra moist
- 6 cups chopped rhubarb
- 1/3 cup of sugar
- 1 cup whipping cream (don't try half and half)

Instructions:
- preheat oven to 350
- prepare cake mix as per instructions and pour into greased 9X13 pan
- toss rhubarb in sugar...use more sugar if you don't like it tart
- spread rhubarb over cake mix
- pour whipping cream evenly over top
- bake for ~50 minutes until top browned and toothpick comes out clean

I adore rhubarb. Would you like my recipe for rhubarb slush? It's guaranteed to take the stress out of all that Very Scientific thinking. It may even allow the thinking to progress in new and creative directions!

Yummo for sure...and I am not sure I like Rhubarb, maybe that will make a lover of it out of me!

Ohhhh that sounds yummy and easy!!! And I love rhubarb!

I could trade you a completed, albeit dated (1983), thesis in exchange for some potluck pudding. I don't suppose your thesis supervisor would accept that? It's got a looooong impressive title...something about single parents and employment policies, though I no longer remember exactly what!

Hmm...a chapter from a novel, another about mother-infant bonding and another about single-parent employment. I feel a thesis coming on! Unfortunatley it seems somewhat discordant with the long and impressive title of my own thesis, which is allegedly on the use remote sensing data to assess forest fire smoke exposure for epidemiologic research. Still, it is tempting...

Hey dp (and everyone else):
I'm thinking that we should have a "virtual trail ride." Start at your place (you're north of me), maybe visit some other Canadians,move south, then eastward thru 'Murka. End up at horsecrazyamerian Lytha's place in Germany. On a virtual trail ride, the Atlantic ocean is not an obstacle. Also, I want to bring my first horse, Story (now deceased) for Willy to ride because he needs a beginner horse and she was the best.

Oh, you triggered some happy childhood memories. Rhubarb grew on our property when we were kids. Hope you are beginning to see the light at the end of the thesis tunnel!
